APPENZELLER TRIPE WITH TOMATO SAUCE | READY MEAL
A traditional dish from grandmother’s time. Tripe is the term used to describe the rumen (stomach) of ruminants, usually cut into strips. Tripe thus belongs to the offal. The home cook uses only the stomach of domestic cattle for this traditional dish.
The rumen is cooked with top quality pelati tomatoes (pomodori). A special home recipe of the chef is added. Only high-quality pure spices are used for seasoning. This means that no ready-made spice mixes are used, but the individual spices are used separately or mixed in the house. This dish goes very well with boiled potatoes and rösti.
