Vegetable Soy Risotto
A high oil and protein content characterize the soybean. The quality of soy protein is comparable to that of animal protein. For vegetarians it is therefore an important component of a balanced diet. The soy risotto is a great alternative to the classic rice risotto, which originally comes from the cuisine of northern Italy. Carrots, celery and leeks, as crunchy garden vegetables, give the right bite.
